My name is Frank and I'm currently living in Anchorage (JBER - Joint Base Elmendorf/Richardson) Alaska. I'm medically retired from the US Army and my wife is active duty in the Air Force. Because I'm 100% medically retired, I am a stay at home husband. As such, I tend to the home front. One of the most challenging things for me is cooking, preparing meals, coming up with things to cook, etc.
We recently started fishing here, for salmon mainly, and we LOVE it! With large catches (from my wife mainly), I had to start smoking the fish, so we purchased a smoker. We bought a Bradley smoker, our first, from Fred Myers. As of 2013, Fred Myers discountinued carrying the Bradley smoker; shame on them! The down side to this purchase is that now there is no one in Alaska that sells and supports Bradley smokers, so no Bradley wood pucks. I've recently found the Peterson Puck's and will try these.
I came upon this web site (and thrilled that I did) as a result of trying to find a good vacuum sealer machine. We purchased the one from Costco, it lasted through 22 sock-eye salmon before it died, about 132 packages. We took it back, got our money back and am now in need of a new sealer, and FAST!
I found the Vacuum Sealer Unlimted site and have emailed Lisa for assistance. It looks like the Vac Pro 305 is the best to get but not certain. In any case, I hope to hear from her soon.
I look forward to learning from this site. I desperatly need/want to learn how to smoke, seal, and do canning, so I can become a better food preparer. I need to become a better cook too, before we end up eating all our meals out, besides the salmon that is.
So, any ideas, advise, suggestions on how to better seal, smoke and preserve (maybe canning, as I"ve never done this), would be welcomed!
