I'm rather new to the idea of smoking meats. Mostly, I'm just wanting to make sausages myself, and I've ordered a Enterprise #10 meat grinder off of ebay. I think I'll probably start out just grinding my own hamburger for now, but eventually I'm going to move up to smoked sausages. About a year ago, friends invited my wife and I to dinner, and the host claimed to have made the sausages. When I asked how, he pointed over to a meat grinder on the kitchen counter. I was a little bit intrigued. Then, maybe 6 months ago I was in a doctor's waiting room and picked up a cooking magazine... and they had an article on making chorizo. It was simpler than I imagined it could be, to look at the pictures. So here I am. A day ago, we bought our chest freezer, it'll arrive on Saturday. I'll be able to stock up on things when they're on sale. I've got a hand-crank meat grinder on the way... and sooner or later I'll get around to buying a wood smoker. I think it's going to be fun.
