I'm rather new to the idea of smoking meats. Mostly, I'm just wanting to make sausages myself, and I've ordered a Enterprise #10 meat grinder off of ebay. I think I'll probably start out just grinding my own hamburger for now, but eventually I'm going to move up to smoked sausages.

About a year ago, friends invited my wife and I to dinner, and the host claimed to have made the sausages. When I asked how, he pointed over to a meat grinder on the kitchen counter. I was a little bit intrigued. Then, maybe 6 months ago I was in a doctor's waiting room and picked up a cooking magazine... and they had an article on making chorizo. It was simpler than I imagined it could be, to look at the pictures.

So here I am. A day ago, we bought our chest freezer, it'll arrive on Saturday. I'll be able to stock up on things when they're on sale. I've got a hand-crank meat grinder on the way... and sooner or later I'll get around to buying a wood smoker. I think it's going to be fun.

richoso, there are so many other things I need. Thinking about getting a seal-a-meal thingy so I can freeze the stuff without freezer-burn. I'd just grab an old one at Goodwill, but the new ones actually vacuum-seal it, or so I'm led to believe. And of course, I have no idea what to do about a smoker. Though, I'm probably in the right place for advice on that when it comes time to get one.

First off welcome to SMF. You'll like it here cause there are abunch of good folks here that would just love to help you out with just about anything to do with smoking. We really like to have newbies here because they can bring in a new propective to how things are done. There's nothing like a new set of eyes to give and new way to make things that little differant to make things alittle better. So I hope you know about the Qview here.

It's also free and it will give you the basics of smoking. So after all of that you just need to go grab something to smoke and if you have any question just post them here and we will answer it quickly so you don't have any mishaps with your smoke.
