Just joined. I live in Houston, and I enjoy weekend smoking of chicken, brisket, and baby back ribs. I find the ribs to be the most difficult and searching the web for tips brought me to this site. I've read about the 2-2-1 method. I also read that the secret to fall off the bone ribs, which is what I like, is the second 2 hours. I am trying some now, but will do more like 1-3-1 to see if that makes them more tender. Fun to expiriment too.
