I stumbled on the site while searching for tips on cottonwood and this is great! My name is John and I live in southwest Alaska. I started smoking foods when I moved here about 20 years ago. I have an upright smokey mountain hot smoker, a tall upright cold smoker and a grill. My favorite is to make sausage with whatever I have around and then cold or hot smoke for flavor. I have also smoked lots of fish, game, meats, cheeses and vegetables but I have to admit, my favorite thing to smoke is pork and my favorite wood is apple. I guess the southern Minnesota roots run deep.
It is almost salmon time here and I am planning on building a small cold-smoke house and put up strips this year. We have brown bears in the yard every year and I have been hesitant to build a smokehouse. They have drug my smokers and grills into the woods in the past. After a battle of wills last fall, I have resolve this year and an electric fence ordered.
I am glad to have found this site and look forward to chatting up the great gift of smoking.
