Greetings, my name is John and I live in Tampa, Florida. I am a water treatment plant operator, and my schedule affords me lots of opportunities to smoke meat. I worked as a server/bartender at a BBQ restaurant in Colorado Springs for about a year. That experience really wetted my appetite for learning how to smoke. I am certainly a beginner, but I've had several successful ventures in home cooking. I bought a charbroil offset stick burner about two years ago and it's on its last legs. I am confident with my whole chicken, chicken wing, and brisket abilities. I've gotten very good with baby backs, and my pork butts seem to be hit or miss. Either way, with my charbroil decaying rapidly, I'm about to get a GMG pellet smoker this week. Hooray for my upgrade! I'm not sure which model yet, but I hope to put the advice from this site to good use, and I will post anything that turns out pretty and tastes great. I look forward to chatting with you guys in the future.

John, welcome to SMF!  Looks like you are well on your way to mastering the basics.  You'll get the pork butt perfected in no time.  It is one very forgiving cut of meat so share what makes it hit or miss and we'll eliminate the misses (the butt, not the wife).
