Hi there.     I'm Cael, I'm 42 and from Alberta, Canada.

I'd forgotten how much I love barbecue until a food truck from a local place came to my work about 2 months ago.    Since then I've been reading everything I could get my hands on, scouring your forum daily, researching cuts, availability, etc.

Now, I'm a super novice and have a real love of automation combined with tried and true techniques.    So after reading a lot I opted for a MES 30 with window and RF.    Lots of people here described it as smoking with training wheels, and I think that suits me fine.

I don't even have my unit yet, it should arrive in about 10 days.    It would be amazing if arrived by July 1 (Canada Day) as that would be a fine day to set it up and season it to get things rolling.   But I will be patient.

Til then I will continue to read and re-read stuff from this site, and maybe ask a few questions regarding conflicting information I've seen.

I'm so glad I found your site.

Good morning and welcome to the forum, from a cloudy, overcast and rainy looking day here in East Texas. Lots of great people with tons of information on just about  everything.

Welcome from SC, Cael. I know you will enjoy this site with all of the folks that are eager to share ideas, tips, recipes and anything else that you need. All you have to do is ask. Good luck with your new cooker, Joe

Welcome, and regards to conflicting information sometimes if you ask 10 people you will get 10 answers. Kinda like the old joke about truck drivers, what's the best way to start a fight in a truck stop? Ask what is the best way to get to...
