hey folks, new owner of a MES bluetooth 30"

   Have been smoking (semi-successfully) for several years beginning with charcoal and then converting to electric on a cheap metal box smoker.

   Had a very hard time with temps so have upgraded to an insulated electric MES.

   Look forward to spending time here reading and learning.

These folks have made even me mostly successful.

Look around ask questions, have a good time and best of all you get

Another hello from SC! I'm also new to the site... new to smoking, as well... and I also bought a MES 30"... the Bluetooth model. The learning curve this past weekend was steep, but fairly quick due to so much info on the site.

Comments... the Bluetooth is cool, and I don't have ANY problems with the newest iOS app... but the range sucks and I sorta' wish I had gotten the standard stand-alone remote.

The MES is NOT GOOD at low temperature out of the box. I couldn't get any fire with temp set at 160 degrees. Removing the rails that hold the chip tray and letting the tray sit directly on the coils fixed that problem... but after I finished my salmon, I replaced the rails and have ordered a Amazen 12" tube.

I have not found temperatures to fluctuate very much... overall I'm pleased... the results were really good, but I can tell I'm going to be tweaking my setup and techniques a lot going forward.
