Hi,

I'm Jon. I live In Eastbourne, East Sussex UK. 

I have been into smoking meat for along time as we have family in Houston TX. I visit TX twice a year and manage to get a lot of BBQ in. 

Mainly visit Austin, San Antonio and Houston for it.

I use a weber kettle at the moment and I'm in the process of getting a Yoder Smoker smoker signed off by the purchasing department at home (wife)

Hello and Welcome to our addiction.  From Texas, ( Mom lives in S.A.. Dad near Corpus Christi. ) been here for 16 years.  And San Antonio Tex-Mex??  What ya think??

Many good folks here with a load of experience that they are more than willing to share.  If you have specific questions just start a thread and someone with experience will be along soon to offer advice.  All info you can provide us with such as smoker type, location and so on will help us answer any questions you may have, and pictures help a bunch.  Spend some time doing some research on the forums, tons of advice and recipes already available there.  Please add your advice to the discussions.
