Hi all new here and new to smoking meats and I have a lot of questions. But I will start with the most basic one how do I get started I am getting a smoker coals and wood chips today and want to smoke some chicken thighs
 
Do you have the Brinkman Smokin Joe like your avatar?  I did a few things to mine to make life much easier.  First problem you are going to have is that when you are smoking something larger like a pork butt adding coals will be a pain in the neck.  That's why I mounted my legs on the outside & put the charcoal pan on a few bricks.  That way you can just lift the entire smoker off the charcoal instead of adding through the door or without having to remove your meat.  I also drilled five 1/2" holes in the charcoal pan for air flow.  I also use my 18" weber charcoal grill grate in the bottom of the charcoal pan.  Hope that helps :)
