I'm new - looks like a great forum - have some done some smoking - want to learn some more - especially cured meats
Got a new stainless masterbuilt electric smoker- I think it will be a beautiful relationship!

Welcome to SMF! Quite a few here cure meat. I'm in the middle of my first BIG ham. Have done some smaller, but this is week 3 of the cure. Check out the "pig party" thread. Lots of bacon makers, cured jerky and sausages too. Poke about...threads and knowledge are EVERYWHERE!
 
thanks for all the kind welcomes - broke in the new smoker right - ground, stuffed 50 lbs of venison summer sausage the other day - 2 batches - 20lbs of deer meat, 5lbs of ground pork sausage and a Legg's summer sausage spice kit with a packet of Prague cure #1, apple wood for the smoke. Best I ever had but I won't try to smoke 50 lbs in the smoker at once again. 25 lbs at a time next time
