Woman told me: Why buy the whole pig for a little sausage. Thought I'd learn how to smoke the sausage real good so she would want the whole pig. Sayn. Been snooping around hear enough to buy a gasket, bayou needle valve and ET-732 for my 30" Master Built Pro. First time I smoked ribs they fell apart (b4 needle valve). I have my own recipe for sauce. Just smoked some whiting I caught and I was satisfied with the outcome. I used alder wood and some tips I learned here. Will probably smoke more fish than anything since I fish a lot. Looking forward to doing my first brisket after I read up on all your advice. Enjoy reading what you all have to say.
