I love smoked salmon or just about any kind of fish. I have tried smoking on a grill with a hot box, but it doesnt really work that great. I have an electric smoker coming next week and would sure use some suggestions for some for smoking fish.

I work rotating shifts and am up at night a lot. THis forum looks great. I really do love good smoked food. My wife and I love to cook, and I am excited about expanding my repertoir. Can you tell me some good sources for the wood (alder, mesquite,etc)?

just getting started,but really excited to get into smoking. Actually im not a biker as knucklehead might suggest. the name was given me by my dad when i was a kid.The monaker doesnt say much for my image,but, he gave it to me from my actions. I am looking forward to suggestions and help in learning the smoke. Thanks!
