hi guys, im from Echuca in Victoria Australia and am looking around for my first offset smoker. im a chef by trade but this is something they dont teach in school. im looking forward to getting to know people here and learning the different methods and techniques used.
i am only just starting to research units and have not decided on anything as yet, but would love advice from any others on this side of the globe with what they have and the advantages and disadvantages.
