hi guys, im from Echuca in Victoria Australia and am looking around for my first offset smoker. im a chef by trade but this is something they dont teach in school. im looking forward to getting to know people here and learning the different methods and techniques used.
i am only just starting to research units and have not decided on anything as yet, but would love advice from any others on this side of the globe with what they have and the advantages and disadvantages.

Welcome to SMF!  I'm not an experienced offset guy, but I know that you get what you pay for.  Buy the best that you can afford and learn to smoke with it.  Glad you joined us.
