I guess I need to check in. Technically I'm not a newbie although still relatively new. I first came to SMF about 4-5 years ago. I just went by my real name then, but for the life of me I couldn't remember my pswd and the email I used back then was so old I couldn't even remember what that login was or any of that info, so.... I just submitted a new entry here. Alas, I am a newbie once again. I have a GOSM wide body and have smoked everything from beef, pork, yard bird and his big brother that frequents around Thanksgiving, to fatties, ABT's of many different varieties, to fish, nuts (didn't turn out well imo), potatoes, beans and probably some other stuff I have forgotten about. I am a Die Hard Gator (played there in the early 90's) and tailgate with the same group of buddies for most every game for the last 11ish years. The smoker and its bounty are always quite the hit at the tailgate. Usually, it is something quick like sausages, chicken, ribs ABT's etc. But every now and then when we have a late game and if I get my but out of bed early enough I have snuck a butt and/or brisket in there too.
Thanks to some designs I have seen here, I'm in the process of building my new toy. A smoker/smokehouse out of wood. It will be insulated and lined with aluminum on the inside so I can smoke into the 250 range without any worries. Basically, my dimensions will be 3x3x6. Bottom 2 feet will be for the burner (propane) and water drip pan. I should still have the top 4 feet for smoking room. At 3x3 and 4ft tall I think I should have ample room for just about anything I want to do.
That's about it for me. Any advice on my new box or any other kick azz ideas on smoking, recipies etc would be great. Thanks in advance for all the hospitality this place is known for. Oh, and to all college football fans, we have 23 days till Kick Off!!!!! And all you NFLers, tonight the preseason begins (finally). Time for much smoke, football watchin and beer drinking. Ahhh how they go hand in hand!
