My name is John I'm in southern wi. I have been in the restaurant industry for the past 10 years working in fine dining.. I have used a trash can smoker that i made about 10 years ago, a smoker Made from a hot box, a box style bbq smoker. I have also cold smoked meats and slow cooked them in a alto sham. I have been using a cheap "barrel grill" to slow cook and grill things though not really enough room for indirect heat. Currently I built a cinder block bbq pit I'm planning to use a piece of painted metel roof for a lid. http://www.homedepot.com/p/Metal-Sa...of-Panel-in-Burnished-Slate-2313449/204255062 Im wondering if if this will be alright or if I should be concerned with it being toxic? Also does anyone have any opinions of grates expanded metal vs porcelain coated steel or any other cheap options. cant wait to make some pulled pork and brisket.
