Not entirely sure what to put here, but hi all.  Got a MES 30 for Christmas and am currently on my first smoke, some ribs.

I'm an IT guy by day and a freelance artist by night.  Love to cook, and when it comes to grilling charcoal is the only way to fly, but I wanted a smoker to make low and slow easier to come by.  Super excited to be here, and I'll probably end up using the smoker even more often than the grill!   (note: I'll grill rain, shine, or snow)

I did!  I put an in-progress shot in my MES 30 thread over in the electric smokers subforum.  Though they're cooking a bit fast and might be overdone, I'm sticking it out for the full 6 hours just in case.  =0)

First off welcome to SMF. You'll really like this place for there are a bunch of really good folks here that would just love to help you with just about anything to do with smoking meat. Then if you have any questions you just post them here or yu can try in chat for a faster answer. If you are really new to all of this I would recommend that you look up and take the e-course. It is free and it will also give you the basics on smoking. So with all that said now go and get something to smoke.
