I guess I didn't do this intro right the first time, So let me apologize and start over.

Hi My name is Scotty, I am 50 yrs. young, I am an avid spearfisherman and have smoked alot of Fish in my day, however, I have been smoking meats for about a solid year or more and want to learn everything I possibly can. I bought one of those propane smokers from Costco a couple of years ago and Intend to wear it out! and possibly someday build my own or spend some serious cash on a really good one. hams for our last Christmas dinner and they turned out great! Almost as good or better!than a Honeybaked, the family went nuts over it. I want to really refine my skills and I think this the place and these are the people that can help!

Hello Scotty and welcome aboard. I too smoke allot of fish here in MN but with some luck and my new UDS I finished tonight I hope to be smoking some venison treats.I can't wait to run something's through the new smoker,oh is the family in for some great fixings. the wife just bought some pork tender loins at Sam's # 1.49 lb so she got a case 51lbs that will be some of the first things in the UDS.
