Hey all on SMF. My MES 30" digital Gen 1 from Walmart finally got delivered the other day. My Maverick ET 733 arrived shortly afterwards. :yahoo: I have done lots of grilling, but have never done any smoking whatsoever. Since getting the smoker, I have read through hours of posts and tried to absorb as much info as possible. While watching the games today, I set up the smoker and fired her up for the seasoning process. Everything worked according to plan. The only thing I didn't do was set up the Maverick remote. Seemed like a pain so I just used the probes. Also today, I got out a notebook and started to jot down different temps and methods for most of the different meats. I figured I better do my homework before doing my first smoke.

I'm hoping to get in my first smoke next weekend. My wife picked up a slab of baby backs, chicken thighs and a whole chicken. Not sure what I'll be in the mood for next weekend but I'm sure it will be fun messing around with my new smoker. Thanks to all for all the info on this site! I'll keep you all up to date as I learn about my new MES.
