Just saying Hello.

My name is Craig and I live in SE Houston.

I have been smoking meat for about 10 years, and love learning new processes. I sold my big KLOSE smoker a few years ago, and have been using my Webber 22" Kettle with moderate success. 

I recently(last weekend) purchased the 40" MES Bluetooth from Sams club. So far I like it. I did a test run last Sunday of Chicken Breasts, and so far so good.

I plan to try a brisket and ribs this weekend during the Daytona 500.

 
You can never have too many smokers.  I have a vertical charcoal pit, but I use my 22.5 kettle for shorter smokes all the time. Different tools for different jobs, right?  Smokin' is smokin' and that's all that matters, best of luck with unit.
