VERY new member here. I haven't grilled, let alone 'smoke anything before. I just turned 23 years old a few days ago. I was training to be a fire fighter/emt (OCFD) and was severely injured during training; and I'm currently on disability. I live at home now, because I can't work and make enough money to live on my own. Ironically, about the same time I was injured, my father had to retire 4 years early from his 30-year retirement. So I have been helping him out around the house since his mobility is severely limited.

He had been into cooking/grilling/smoking for a long time, but was never really good at it - likely because he just wasn't as interested as I am. He wasn't too eager to help me out, so I have been learning on my own, despite our differences.

Anyways, I have a Chargriller 2121, and will be picking up the SFB and a smaller (~300sqin) Charbroil mini-grill/smoker (the one with a SFB) (~$90 @ Walmart) for hot dogs, hamburgers, etc. since the 2121 has a very large cooking surface, and isn't very efficient for quicker items like those I listed.

First time using it, I did some boneless baby back (my Mom picked these up) and used a receipe from another website, and they were EXTREMELY good - cooked with care and passion, and you could tell it.

I have since done a few experiments, but haven't gotten my hands really dirty with the bigger cuts of meat (sorry, I am slowly familiarizing myself with cuts of meat), and why I've come looking for help.

This is the Japenese smoker my father has, but hasn't used it for years. Some pieces are rusty and need to be replaced, but I haven't a clue as to where to get parts - furthermore I don't know who makes it either.

Any ideas?

Lastly, my buddy - keeps me company while maintaining the grill.
