Hi everyone. I'm new to the forum and the smoking world. I started out just using my Weber Summit S670 and it's smoker box with some baby backs and pork shoulder. I picked up a Smoke Hollow 38" two door a couple of weeks ago and so far I'm loving my new hobby, so much so that I'm already thinking about upgrading to a Stump's Baby XL. On the Smoke Hollow, I've made a shoulder, a brisket, and some ribs. Everyone loved the shoulder and ribs, but my brisket was a little iffy. I picked up a couple of flats at Costco, but the pickings were slim. They were both a little on the thin side and cooked pretty quickly, even at low temps. Needless to say it wasn't my best work, but was still edible. Anyway, I look forward to learning from all of you.
