Welcome rick happy you could join us you will really like here these people are really nice and love to help in many ways. first off you might want to look up the 5-day smoking E-class. It's pretty helpful and will give you a base to start from.

Welcome to the forum Rick. And dont worry bout gettin off on the wrong foot. We all tend to do a thing or two wrong once in a while. Most here are very forgiving.

I'm Mal. I'm a Texan who grills and smokes. I mainly grill marinated steaks and beer can chicken chicken and hamburgers, because that's what the family demand is for, but I also smoke sausage and brisket and ribs. I use a Weber Genesis gas grill and a Smoky Mountain gas smoker and I'm thinking about getting an electric smoker, maybe that 40" MES one from Sam's. I make my own rubs, sauces, and marinades.

I'm a long way from being a master griller or smoker but I think I am a solid journeyman.

And, like most Texans, my best dish isn't my BBQ but my chili. :)
