My name is Brad, I live in southern Ontario, Canada. I'm a total smoking rookie who's been lurking this forum for a few weeks now gathering info & this past weekend I built a UDS & tried my first smoke! I figured I might as well become a member and hopefully continue to learn lots and eventually contribute a thing or two.
I'll post a couple pictures of my UDS build in the proper forum but I don't have the pictures on me at this moment. Our first smoke was a nice think cut of beef rubbed with some various spices I had kicking around the house. Overall it went well, I'd say our main problem was the smoker getting too hot! It cooked a little quicker than we wanted it to, but couldn't get the temps down below 300F. I may have to rethink the air intake vent we rigged up, maybe there's too much air getting in? Either way, the beef cooked for around 1.5 - 2 hrs and even though it didn't end up cooking as long as we wanted, we did a achieve a bit of smokey flavor and a nice little smoke ring on the outside of the meat. Needless to say, I'm pumped to try my next smoke! We're having a party this weekend, so I'm thinking about trying a few full chickens.
As a bit more background, the reason I wanted to get into smoking was because I'm a hunter and I wanted to try making jerky out of the geese we harvest. I tried a few different goose recipes last year but none of them really tasted overly great, so I was hoping to start making jerky out of some of the geese we get. I don't know if anybody uses their UDS for jerky or not, but I figured it's worth a try.
