Hi all! My name is Justin, from Massachusetts.  I am a complete newb to the world of smoking, but so far am loving it.  I just got a Brinkmann Trailmaster on Tuesday, today was my second time using it. I am still dialing it in, I am waiting for my tuner plates, gasket kit, and door latches to come in.  (Will be in tomorrow).

Last night was my first time smoking, and I did a couple 5lb beer can chickens.  They weren't bad, but the skin was softer than I'd like.  Threw them in the oven for a few minutes to crisp it up.  Flavor was on point. 


Tonight, I wanted to try my hand at some ribs.  It was basically a test run, as I'm cooking 8 slabs for my daughter's birthday party tomorrow.  If they turn out like tonights, I will be very pleased.  These turned out much better than I had hoped for or anticipated.  My wife said "No lie, these are the best ribs I have ever had". I'll take it!! 



Like I said, before this week I have never smoked anything before.  Looking forward smoking to much, much more, and learning equally as much!
