I'm completely new to the forum and am extremely anxious to pick some tips and tricks that will help me avoid "rookie mistakes"

I bought a small ol' smokey electric smoker a few years ago which recently went to the smoker graveyard and prior to that I never fully mastered the art of smoking anything that didn't end up dried out.

I picked up a solid master built however all the guts are trashed including the digit thermometer. I'm thinking about placing a new electric coil(hot plate(?)

Got the smoker for free so really this is more of an experiment/learning endeavor rather than a permanent smoking solution.

Good morning and welcome from East Texas, let us know how it turns out. Lots of electric smoker members on here who can probably help if you need it.

To me, tinkering with the smokers are half the fun! Sometimes you have to smoke on them many, many times to be sure they are just right!
