I'm John from the Dayton, Ohio area, semi-retired Physician Assistant. I've done a bit of smoking over the years, a vertical charcoal smoker & a larger grill where I can keep the meat at one end and coals at the other. I stumbled into the forum when I was trying to track down recipes for brining and the like. Saw a thread from here on making pastrami, and the hook was set! I'm waiting on a 3rd attempt at shipping me an offset smoker...the first two got a little crooked during shipping, ha. The forum looks great, fabulous info & recipes, and I just found the Fattie Throwdown thread...I'm toast now!!!
