    Hanging in the GOSM drying out a bit. I got the mixture to wet, LEM style...

    This will be cold smoked for 6-8 hours!

    So what is it, LINGUICA!!!! My favorite breakfast sausage!!!

      I was almost expecting to see Case's mini's stacked 5 high for the sausages. [​IMG]

    You know it Woody!!! I ordered it once at Island Style Cafe in Waimea, think it came with a hen house of eggs, and enough sausage from two pigs!

    So for those that asked you pull the lemons out before stuffing. I'm using what is supposedly a traditional recipe. All except the cure and the powdered milk. I'm glad I didn't add as much water as the recipe called for ( in fact I only added half the amount). Wish I hadn't added any. I think the port was enough. Oh well it's a learning process.

    I used these casings as I could get them locally. Seemed to work fine.

    Yeah those LEM casings require a constant stream of running water to get them to work!!!!!

    I think I've only eaten at the "Hawaiian" Style Café once! My kids went to school at the building next to it but they always close around 2 PM and I wouldn't get to Waimea until after 3 to pick them up from school... They are known for their MASSIVE portions!!!
