Just purchased a MES found this forum and had to join. Been hunting my whole life. Made a lot of jerky on a dehydrater. My Dad does a lot of smoking. So I decided to give it a shot. Tonight I will make a whole chicken and 6 thighs. on Christmas I will do a turkey. Wish me luck.

I'm right down the road from you.
I just finished making my brine for chickens I'm smoking for Christmas dinner.
Soak your Chickens or Chicken parts overnight in a brine solution the night before you smoke and you will be blown away by the flavor and juiciness!!

Thanks Guys, I did not brine my chickens. But I will on the turkey. I am excited and scared. If the chickens don't go well I will grill the turkey on my weber.

Wife bought a 20# turkey. I am just reading that is to big. What are your thoughts. Guess I better get some pics. This is like the landcruiser sight. Pics or you are lying.

First off welcome Jim to SMF. You'll like it here cause there are abunch of good folks here that would just love to help you out with just about anything to do with smoking. We really like to have newbies here because they can bring in a new propective to how things are done. There's nothing like a new set of eyes to give and new way to make things that little differant to make things alittle better. So I hope you know about the Qview here.

It's also free and it will give you the basics of smoking. So after all of that you just need to go grab something to smoke and if you have any question just post them here and we will answer it quickly so you don't have any mishaps with your smoke.

When you uploading to Photobucket I always use the Large IMG setting, 640 x 480 it is a nice size...

Some say they won't do a 20 pound bird and some do. I spatchcocked a 19 pound turkey and it came out great. Just make sure it gets to 140 degrees within 4 hours.
 
Agree with Bassman. Just take some sheers and along each side of the backbone and spread her out!
It will cook beautifully, may not look traditional but tastes great.

Thanks for all the welcomes and comments. I will attempt to spatchcock my turkey. Trying to figure out what to use ie knife, scissors, chainsaw. BTW I belong to a LandCruiser forum that is awesome with info. You guys may rival them. Great site thanks to whoever host it. I will learn the names as I go.
