I'm thinking you meant the brisket was at 133 IT.

If the IT hit 175 & only went down to 133, it's fine.

Just finish it in the oven.

Doesnt sound right... it dropped over 100* in 3 hrs?
    You live on syberia?

  5. I'm wondering if I hit the Celsius button

  6. That would leave it at 91.4. Is that safe?

Seeing it was above 140, i would asume so. But i'd wait to here from others . Maybe PM chef jimmy.

  8. I must have hit the Celsius button which would put it at 91.4. Is it safe to eat or should I chuck it

It's safe to eat. It was probably only below 140 for an hour or so, even if it was 2 hours, it would be OK.

At 175 everything that can hurt you is dead, and cooling it down for a couple of hours is not going to change that.

I'm assuming that when you put it in the oven, you finished cooking it, right?

I mean you took the IT up to 195-200 in the oven, correct?
