I had a problem with my smoker - Bradley electric,   I put turkey legs in a brine overnight, then tried to smoke them and my temp in the smoker did not get over 150 degrees for 20 hours.    I now have the smoker working and will cook them at 350 for 4 more hours.    Do you think the turkey is still good.
 
The safe rule is to have your meat between 40 degrees and 140 degrees for no more than 4 hours. 40-140 is the perfect temp for botulism to get established but it won't establish itself in under 4 hours.
 
Throw them out and don't even give them to the dog!

Thank you, I will have to throw them away.    I had them cooking all night at about 130 degrees

We love to see pictures of what you are cooking (or what we call q-views here at SMF).  To "upload the q-views" just follow the directions here and it will be easier. If you are using a cell phone, an IPad or a kindle, go to the main SMF page and click the Mobile button. About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing

We are all smoke junkies here and we have to get our fix. If you have questions Post it
and you will probably get 10 replies with 11 different answers. That is because their
are so many different ways to make great Q We all have our own taste.
