I've had a 4 pound flat (my first brisket) on since 12 noon today. At 3:30 - 4 PM it was at 140degrees and right now it it is the same (4:55pm EST)... Is this the "plateau" that i've read about? I thought that happens at around 150 degrees typically... I think i pushed it by telling my dinner guests we were eating around 7...
 
Something doesn't sound right Make sure you are cooking at 230 / 235° and check the thermo you are using for internal temps.

 This is the reason we advise to allow yourself 2 hrs per lb for briskets ,butts and other large cuts.
 
would that be a electric smoker ?   cause I had that a few times , I rolled the temp up a bit and it went way high .....so now I set it up prior to start and make sure , and that works . all so  move the prob around ...AND if its a elect prob, check the battery's
