Help With Temp On Gosm

smoked some ribs yesterday turn out bad
but the temp on the top rack all the way up was 20 deg hotter
than the rack over the water pan
had thermometer in the vent on top
had thermometer on top rack removed from top rack to rack
over the water pan was 20 to 25 deg cooler over water pan
smoker had time to get stared good
 
did you have your top vent all the way open ?
does your have the bottom vents?
was the water hot?
I have a gosm and I have noticed a small temp difference but not that much.
mine does not have the adjustable bottom vents.
I always run with the top vent fully open
 
what were your temps? why do you think the ribs came out bad?
how long did you cook them and where in the GOSM were they placed?
foiled or un foiled?
I am just trying to figure out whether it was actually a temp issue or something else.
also how loaded was the GOSM how many racks of ribs and how were they placed? any pics of the process
 
You will have a differance directly over the water pan for the heat will go around the water pan. I always put my meat on the middle rack and higher in my GOSM and smake Vault.

Sorry your ribs turned out bad, mudduck. Was this the first cook in this rig? If so, you may just need to do a few more smokes to learn its quirks. I have realized that every smoker is different, and even that same smoker will perform differently under varying conditions. If you keep your vent wide open, I wouldn't think you would consistently have such wide-ranging temp differences from top to bottom. Its hard to know for sure, but sometimes weather (cold, wind, etc.) will drastically effect the performance of my GOSM.
 
Those are the same questions I would have asked you. Closing the top vent can create creosote, which is a health risk. You should always use the top vent wide open. If you have bottom vents, closing them to factory settings will sometimes make the bottom rack the hottest of all racks. If you open the bottom vents, it'll burn hotter over all as you are providing more oxygen. I hope this helps you.
