Sorry to hear it wasn't exactly what you wanted but you said it did taste good thats the beauty of smoking usually even our not quite rights are good eating. If it wouldn't pull then I would suspect the temp wasn't high enough and I'm sorry I didn't tell you to probe it in a couple spots to make sure you weren't too near the bone of in a fat deposit which will both give you false readings. Another good method of checking is that when you can easily pull or move the bone its done. As for bark maybe try not foiling it next time this will give you more bark. Try foiled and not foiled and figure out which you and your family like best.
 
Sorry to here about the results. At least it had a good taste.
As for the bark, I did a butt last weekend in my GOSM and it had great bark. I did not spritz/srapy anything on it. My rub had some light brown sugar in it and I did not foil it. I took to 205* in the smoker pulled out and put on a cutting baord and tented with foil for about 45 minutes. The meat pulled easily, was very moist and juicy and had great bark. I think that you may not get the bark result you are looking for when you spary and foil is the spary will steam in the foil and soften up the bark. Just my .02 worth.
