Help smoking fresh Striper

    Good evening folks.

    I good friend brought me two very large fresh water strippers.  I got them cleaned and fileted.     They are currently in water in the frig.

    I'd like to smoke them tomorrow for dinner.    My wife wouldn't take any pictures of me cleaning them.  The larger one was at least 32in. long.  Very nice fish.

    I'm looking for a simple recipe to make these awesome filets tasty.  Did my search and not much here about stripper.

    Yeah, my wife won't take pictures of me cleaning strippers either. Though to be fair, mine usually are of the saltier variety. She gets downright indignant about it. Last time I brought home a stripper she threw both of us out. WOMEN!
    Now, as to your question, shoot a PM to Leah Elisheva. She's posted a couple of her adventures with strippers lately and they're very educational. If anyone would know what to do with a stripper, it'd be Leah.

  4. Hi Wes! And happy Friday to you! If you're cleaning strippers, the weekend is off to a grand start yes?

    Also, encrusting it in a dry rub of black & tan sesame seeds, celery seed, sea salt, herbs de Provence and pepper, and dehydrated garlic flakes, (swordfish done that way here in this photo) is a great dry crust to do with striper too! And who knows, maybe it would even work well on some strippers?

    Cheers to you and let me know if I can help at all, as you've got some serious fish there, the skin is delicious too, and there is fabulous meat inside the head, and so enjoy!

    Another thing that's fun, with a whole one, is to tuck fennel and garlic into slits in the skin, baste it with olive oil and then grill it, and then dump Ouzo on it, light it on fire, then squeeze lemon and add sea salt and eat! It is QUITE the spectacle and delectable as well. I may need to do that when blessed with another whole one.

    LMAO!   Yeah, the wife wasn't happy about me using the good pork cutting board either.   The way I see it, after living with her for almost 30ys, whats she going to do, not talk to me?.....  :)

    Thank you for the response Leah,

    Wow, you are quite the chef!    I thought about doing them whole.  As stated,  I've never done them before.  After getting them cut up, I realized they have no small bones to deal with.  If I ever get another one, it will be scaled and smoked whole.  I also love the steak idea.  I could never present one to a plate like you do, but how it taste is all that matters, right.  :)

    I do love exotic, healthful, and minimalistcally arranged food, and thus my meals are very simple, albeit LARGE, as portions to me should be enormous! Smiles.

    In any event, yes, if blessed to have another striper, then doing it whole is indeed a delectable experience. Meanwhile, I agree with you, in that the TASTE is what's key, and your food sounds delicious!!

    Little niece says, that is a hominy-hymn. She's at that age of making up words to explain her stories.

    We'll see how it goes.   I wish I had left the skin on it, but I can't fix it now.   I'll put some foil under it and see how it goes.  
    Thanks for the laugh FH.    Spell check says striper isn't a word.   Stripper is a word.     Hey,  I live in the Mtns.   If grammar is your thing,  I guess you'll just have to be offended.    It all smells kinda fishy to me......   :)
