So I'm like 14 hours in (started at 4:30 this morning Pacific time), smoker temp 220. Brought temp to 250 at 2:30. It's now 6:45. IT is 186. Does everyone pull a picnic at 200? It's 11 lbs, and yes, I have 2 independent temp probes monitoring smoker temp. They're right on the money at 212 calibration temp.
