Hey folks.
I have 6 kokanee that I filleted out, brined for 18 hours, dried in front of a fan for 7 hours and then had an issue. I put them in the smoker at 145 and 2/3 of the way through the process I had to leave to take my mom to the dr (everything fine now). by the time all was said and done I completely forgot to get them out of the smoker. I had the smoker on a timer so they went at 145 for at least an hour longer than necessary (I usually just hit 5 hours and then check the temp rather than using timer) and then they sat in the smoker while it cooled down for another 8 hours. the fish is obviously very stiff from overcooking. I HATE to waste something I killed and even if it's tough I want to make use of this fish.
my question: since the fish got done smoking and then sat out in the smoker overnight, should I assume it is safe to eat or throw it away for my own safety?
