I Threw a 15 lb packer brisket on last night at 7:00 at 200* in a pellet smoker.  At 3:30 I had the internal temp up to 150*. Was going to wrap it at 160*. Stupid me fell asleep before I got it wrapped and I woke up at 6:30 and my fire had gone out (no idea what time) and the internal temp was down to 120*. Got the smoker fired back up right away and at 8:00 I am back up to 140*. Is it safe to eat if I can salvage it and not dry it out.
