Im planning on building a fridge smoker, Ive never smoked anything before, thought about buying a smoker but I need one that doesn't take much babysitting, so an electric one is what I looked at, but the $$ for one is more than I want to spend, plus I like building things and while I have time and skills/tools to build one, I don't have the time to sit and take care of the smoker while its smoking, I want to be able to load it, start it and pretty much walk away, once I get everything dialed in and figured out as far as time and etc. I have a fridge, pretty much your standard 1950s fridge, I need to get it out and start tearing it apart but in the meantime I want to start rounding up the parts I need.
Im planning on using the brinkman heater element, putting some fire bricks in the bottom, using the Auberins duel probe unit so I can regulate the smoker temp and the meat temp. From what Ive read, using the mailbox mod and an AMNPS or similar for smoke. So far so good right?
So hear are my questions:
1 How are you mounting the temp sensor for controlling the smoker temp?
2 Along the same lines how are you running the sensor for the meat temp into the box? Im assuming it needs to be sealed someway.
3 Where is the best place to put the outlet for the mailbox into the fridge? I want to mount the mailbox under the main box where the compressor used to be. Also what size piping should I use from the mailbox to the smoker?
4 What size should the exhaust be? Will I need a dampner? Also should I put an air inlet on the bottom to get a draft through the smoker?
5 I saw one build where the Auberins unit was mounted in it a different type of electrical box mounted to the side of the smoker which is what I would like to do, can someone point me in a direction of how this was done? Id like to have the unit in a box with a waterproof cover so I can use it outside in the weather if I want to.
Once I get the fridge where I can tear it apart I can see what the insulation looks like, then I can see where to go from there.
