Hey everyone, I have already learned a lot on this forum just haven't joined til now. I live in West Texas where you schedule your smoking according to the wind due to fire hazard. I have a Pit Barrel Cooker, a King Griller by CharGriller and a UDS.
I am wanting to learn to smoke with wood in an offset smoker, any advice on what is the best offset smoker to get would be much appreciated!

Hey David welcome to the site, I'm a charcoal smoker as well.  If you don't get much advice here on your stick burner question, try starting a new thread over in the wood smoker section of the forum.  Take a look at Lone Star Grills.  They have a nice offset cabinet style wood/charcoal burner.  Good luck with the search, and good smokin'.

Welcome from SC, David. This is a great site with lots of really good folks who are always eager to share their ideas and tips. All you have to do is ask and keep reading.

As for an offset stick burner, there are some good ones out there that have a big name. But be sure to check out the Bell Fab. Craig Bell is in Tulsa, OK and is a great guy. He will build you a one off smoker to your personal specs and your personal wants. His material and fabrication are great quality and his smokers are very reasonably priced. Great quality for a good price. Give him a try, you won't be disappointed.

Thanks guys for the warm welcome, makes a man feel good? Joe Black I noticed you mentioned Bell Fab before so I checked out their website. You got yours built by him right? How do you like it? I have never heard of Lone Star Grills so I will definitely look into them too!
 
David, I absolutely love my Bell. It heats well, holds heat very well and the draw is great. I never have anything but TBS. (I pre-heat my splits and this is a great help.) Mine likes to run at 250-275* which is a good temp for most of my recipes. I can back it up to about 230* if I want a slower cook and can easily push it to 300+ for chicken or turkey. It is 1/4" in the CC and 5/16" in the FB. Being a little thicker helps the heat retention in the FB.

Craig is a small operation and will give you great attention. When he gives you a price, which is very reasonable, most any small change doesn't change the price at all. I got everything that I wanted and the price was still below even some of the store smokers.
