New here, thought I would join, maybe learn so new stuff or techniques to enhance my smoking ability. My initial search was to find out what water oak was and to see if it was any good for smoking.  Originally from Texas but living out in South Florida right now where Im currently stationed. I got two pits, a small one and a big one...both made of ⅜" steel. My small one is on a swivel that I'm currently building a firebox onto, and the large one is built on a trailer. Look forward to chatting with everyone and meeting new folks...Kenny
