Hello all. Just wanted to swing by and introduce myself to everyone since I just created an account. My names Ryan and live in Berkeley Springs, Wv. Been cooking and grilling for awhile and just last week I finally got my first smoker (WSM 18.5)from my GF for my birthday. Being new to smoking I was really nervous to cook something for the first time. Ended up picking two St. Louis style ribs up from the store to give it a try using cherry and apple chunks and they turned out great! Tender and juicy! You can say that I'm hooked now. Looking forward to learn from everyone.

 

Breaking in the smoker for the first time. One kinda fell apart transferring them on the last hour (no gloves - lesson learned).
