This might be a long story. I am sorry for that.  I feel the background is important.  I am from South Texas (near Corpus Christi )  I now live in the middle of England. ( long story, woman involved ). Been Q ing for almost 40 yrs. and been a welder fabricator for almost 18 yrs. I have built and cooked on all sorts of equipment.  Don't get me wrong here, learn something new every time I cook. Always said REAL MEN USE WOOD!   As I get older, I don't want to mess with adding wood, checking temps., ect., Been sneaking around here for weeks.  Being a fabricator I can design things in my mind (other members can verify this ).  You folks have been driving me NUTS!  I have a 1955 fridge to convert ( pics to follow ).  " You need to do this". "You don't want to do this".  Have built this thing 8 or 10 times in my mind.  Thanks for all the help.  Without your input this may have been a disaster.  Everyone has helped me tremendously.
