I am new to the form. I have questions and advice for everyone. I have been smoking for about 10-11 years now mostly with charcoal smokers. 

I am a butcher by trade so getting different cuts of meat to smoke is not so hard for me. I have built a few smokers at home for many things and enjoy doing it.

It is great to have an experienced smoker join the forums, particularly a butcher. If you have access to lots of cuts of meat, have you ever considered adopting a fat old Canadian?

my main things i smoke are samon brisket and duck. been playing with a new smoker i made for jerky seems how its game season here now
