Hey everyone. Kevin here from Chicago. I posted one thread about a failed attempt at brisket and everyone has been awesome and helpful so clearly this place rules. As I mentioned in that thread being in Chicago my grilling season is short, unfortunately. But I make the most of what I have. I bought a Weber gas grill a few years back then became obsessed with slow cooking and smoking. I did the packets and smoker boxes on the gas for awhile until that became a bore. Which was quickly. Wife bought me a Weber One Touch Kettle for Christmas last year. And (back to the Chicago thing) I looked at the box on the porch every day until April then finally broke it out. It's been awesome. Eventually I want to get a smoker but that will have to wait until we have a real backyard instead of the square of grass I currently have in the back.

So anyway, only been doing this a few summers but looking forward to many more. I'll be on here lots so thanks to everyone for all you post here. It really is immensely helpful. Go Bears! Go 'Hawks!

About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
