New to the forum, finally figured out what your roll call is. I have been so tied up in the "meet" of things if you know what I mean. Amazing forum and folks to share all you do. This oh boy is from Texas. Love the great outdoors bow hunting and spending time on and in the lake and of course smoken meet and good sigs. Look forward to joining the gang here and learning some new tricks. Thanks to all and "UP IN SMOKE"

Being you are from my home state(and just 120mi. away from my home in Temple).I wish you a BIG HOWDY!

 I have two aunts living in Witchita Falls-(you wouldn't know them as they are in thier 90's).

I hope you burn wood(living in the Mesquite patch),and having Post Oak everywhere, as I am a diehard Stick burner, I may be able to give you some tips(or vice-a versa).

You would be suprised who all we know, we have a large family. our family has been here 70 plus years. Anyway yes I am a stick burner and use both mesquite and oak mostly oak.

One thing I am intrested in is making my own sausage and snack sticks. Just purchased my first stuffer yesterday 7#er from weston.

"cold smoking" is that what you do to cure and smoke your sticks, and at what temp and how long during the process.

My wife and I moved 2 years ago from the home we built 17 years ago and I had a built in brick cooker smoker up right combo. I am actually in the process of puting togather an outdoor kitchen as we speak. Finding this forum this week has my head spinning at the moment, as I look at at this killer information and what all is going on here. My thing is trying to figure out this cold smoking deal I may want in incorporate into the kitchen. great talking to ya and look forward to many more conversations.
