I am stuck between the bluetooth and the wsm22.5 one day ill be rich and custom build one but untill then im looking to make the perfect brisket. I have done really well with pork butts ribs and sausage. Brisket and tri tip are killing me

. Here is my new 18.5 was a birthday gift from my gf by the way. Im 12 hours in on brisket flat and tri tip. Ill have pictures but so far i am so pleases with it. You can see my old smoker which was great and all but geez this wsm is absoluetly amazing! The way it holds heat is great. Ive speant hours reading about smokers, this site is awesome and I am happy to be part of it. Ill even use my computer to type instead of my iphone...
he wants some of the brisket. A little dry but not a very fat cut of meat. Tender with a thick crust. I would say its a big step for me, no thermometer was used im happy. Now the tri tip is on the block.. Pictures coming
