Hi, my name is Dennis and I am from Missouri. I am 51 years old. I have been grilling since I was 14 and been smoking for about 10 years. I am far from just learning although I am learning all the time. I am cooking on a custom built smoker. I do this more as a hobby but I do several catering jobs per year. I am really looking forward to being a part of this forum.

Welcome to SMF from SW Mo Dennis. Glad to have you aboard. Don't forget to find that push pin map and get a pin on there. Those MI folks are trying to take over.

Here are a couple of pictures of my smoker. I need to get her in the shop and put a fresh coat of paint on her. The top on the smoke box is a griddle which works great for sausage, eggs, and hash browns on those all day cooks with an early start. It also folds up and there is a grill, in case you need a quick lunch of burgers and brats or I can set my fish pan on it (with dividers) and cook up a nice mess of catfish and some fried taters. All the shelves in the smoke box are removable. Once I get my temperature regulated I can leave for about 4 hours with no significant drop in temperature. I am having problems getting the pictures to post I will resize them and try to post a little later.

I think it may work this time. I will try and find the pin map. There is so much on this site it will take a little time to figure it out but I am sure it will be well worth it.
