Good morning all,

My name is Owen and I live in the town of Oconomowoc here in Wisconsin (about halfway between Milwaukee and Madison).  Even though this winter has been brutal, I still like to grill and/or smoke whenever possible.  Still using 20+ year old Weber and a Char Griller smoker.  Not a novice, but by no means would I call myself an expert.  I work for Penzeys Spices, so I am constantly meeting and being inspired by all types of cooks.  I'm always interested in learning more from sausage makers & smokers.

Hello Owen, glad to see you found this forum. I've only been on here for a couple months learning and the wealth of knowledge is incredible! I've had two people in a month tell me about a Penzeys spice store since I told them I started a smoking habit. Never heard of it before (came from a small town) but I've come to find out they have one hell of a good reputation. Can't wait to see what you bring to the group!

I appreciate the warm welcome.  As I mentioned, winter has been long and it still refuses to quit.  I want to take advantage of the low temperatures while I can and do some cold smoking (bacon).  Anyone have much experience with cold smoking?  So much of what I read warns of the dangers involved.   
 
Go Bucky! Good to see other sconnie natives on here... In the honor of a badger win I have a pair of shoulders prepped and ready for the smoker shortly. Hope the weather starts turning for y'all soon. Spotted cow and ribs season is right around the corner. Welcome aboard
 
Great game last night.  Amen to the weather turning soon...unfortunately we have snow in the forecast on Mon. & Tues. Spotted Cow is a good beer, but I am more of fan of Sprecher.
