I just found this great site a few days ago and I have really enjoyed it so I've decided to register. I don't have a whole lot of experience with meat but living and fishing in Washington I do have a fair amount of experience smoking salmon and other fish. I will be sure to give advise if it is in my area of experience and I'm sure I'll have questions. Good BBQ is a little hard to come by here in Washington so if I want something done right I'll have to do it myself, plus, I enjoy staying up all night putting away a few brews while I man the smoker! I use an old homemade electric smoker and it has been good to me over the years.
