  1. Hi, I'm new to the forum, but have been smoking for about a year now. I have a Traeger Lil Tex pellet smoker, and so far have smoked elk, chukar, pheasant, salmon, brisket, pork butt, pork ribs, and chicken. Looking forward to learning from y'all and finding more excuses to smoke meat.

Welcome!! I was just looking at 3 chuckars and 2 pheasant in my freezer the other day, trying to decide if they were too old to cook or not. They chuckars are a year and a half old, and the pheasants are 2 and a half, so they may be repurposed as crab bait. Trying to remember if I've smoked any game birds. I know I've grilled 'em, but can't remember if I've smoked 'em.

Anyway, enjoy your time here and don't hesitate to ask questions if you have any.
